Chitosan and zein based film in food packaging.
Zhihao comes from China where he finished his undergraduate degree in Food Science and Engineering (Nutrition) at South China Agriculture University. He completed a Postgraduate Diploma in Food Science at University of Otago and is now continuing his research doing a one-year Master's by Thesis. Edible filming is his current research interest and becoming an expert in this area is his dream in the future. At university, he usually concentrates on his research but outside the department he is a keen badminton player.
Chitosan and zein are two kinds of biopolymers recently of great interest in edible film forming where they act as the basic material for crosslinking. Due to their different chemical structure, the ratio of chitosan to zein would determine the structure in the film product. Effects of formulation on rheological, mechanical, optical as well as barrier properties, antioxidant and antimicrobial activity of film will be well studied.
