Fish Roe Spoilage Metabolism and Compositional Changes

Senni is from Indonesia and her undergraduate study was completed at the National Institute of Technology Malang- Indonesia majoring in chemical engineering . Her master's degree was taken at Flinders University, South Australia in the area of biotechnology studies. Her Master's research thesis was 'Investigating delta 6 desaturase gene expression in a Southern Bluefin Tuna cell line'. During this study, Senni used a number of molecular biology techniques including cell culture, RNA and DNA purification, cDNA synthesis, PCR and real-time quantitative PCR.

Senni's PhD research is investigating bioactive compounds and enzymatic activities, looking at the quality of fresh or processed fish roe.

Her plan is to continue working on, and accomplish as much as possible, in the field of food science or biotechnology in order to improve community development in Indonesia. She wishes to use the knowledge gained at Otago practically, not only for teaching, but also  in researching and advising in the area of food science or biotechnology studies.

Project Outline

  • Understand proper techniques of handling, processing and preservation to improve shelf-life of fish roe
  • Identify and evaluate compositional changes during the spoilage process
