Investigation of proteolytic modification of milk proteins to generate novel biomaterials

Tk is an International student from Bangkok, Thailand.

He completed a Bachelor of Science with Honours degree at the University of Otago, and received a First Class award in Food Science.

His research interests focus on the utilization of enzymes on food materials to produce novel bioactive compounds. These biomaterials have the potential to provide numerous benefits to food industrial technology.

TK's Honours research project was about the application of pulsed electric field on red onion bulbs, to induce the enzymatic activities, releasing the bio-active volatiles from the food matrix. He received an Otago doctoral scholarship to continue his research journey, with a goal of becoming an expert food biotechnologist.

Project Outline

  1. To investigate the functional properties of milk proteins after limited hydrolysis by a group of proteases.
  2. To investigate the production of proteases from sourced microorganisms.
  3. To investigate the functionality of generated hydrolyzed proteins and their ability to deliver various nutrients/chemical compounds
