Measuring and exploring the drivers for food loss in the horticulture sector
Margaret has worked as a dietitian for over twenty years, predominantly with the hospitality sector and other organisations within the food supply chain. She has a passion for supporting a nutritious, sustainable food supply. The implementation of a food waste monitoring programme and the development of a plate waste reduction campaign sparked her interest in reducing food waste.
Margaret is member of the University of Otago Food Waste Innovation Research Theme which measures food waste, develops reduction strategies, applies innovative technology, and works to modify producer and consumer behaviour.
Margaret is currently completing a Master of Science measuring and exploring the drivers for food loss in the horticulture sector. She enjoys being hands on as a volunteer for a food rescue organisation, helping to redirect surplus food to those in need. She is also a member of the Coeliac NZ Medical Advisory Panel with a particular interest in supporting their Dining Out programme.
