The nutritional quality of food depends on its components and how these components are structured in the food we consume. After eating, the food structure must be broken down into nutrients that can be absorbed in the gastrointestinal tract.

This talk will cover the foods journey through the gastrointestinal tract. We will demonstrate the digestion of oat porridge and other foods, from the oral phase through the gastric phase and finally to the intestinal phase. Examples of laboratory-based in vitro models, such as the INFOGEST methods, will be compared with results from in vivo human intervention trials.

Digestion products are analysed using a wide range of techniques, including state-of-the-art microscopy, X-ray analysis, spectroscopy, MRI, and biochemical assays, alongside visual data from human intervention studies.
